I click on the artboard icon and I don't get that menu like in the video.

firstly I would like to ask you what version of Sketch you're using? The version that was used in the video is Sketch 2 which is already quite outdated because the current version is 3.5.1, so if you're using Sketch 3 the artboards are selected differently.
If you're using Sketch 3 you can just hit the "A" button on your keyboard and you should get a list of common artboards and sizes like you see it in the video on the right side of the Sketch User Interface.
