I just was curios about term Vanilla JS - what's that and why does it exist?
And second: I'm aiming for Junior Frond End position - what level of knowledge of JavaScript do I have to have? I assume that like any other programming language it takes plenty of time to master it and explore all the pitfalls.

231,269 PointsThere are many popular code libraries (also known as "plug-ins" or "frameworks") available for JavaScript to enhance it and simplify program development. The term "vanilla" refers to the language being used by itself without any extensions.
You should check the requirements of the employer, but in general I would expect a "Junior" employee to have a reasonably complete functional knowledge of the commonly-used technologies, just little (or no) prior experience in using them in a professional environment.
