That's about it - I tried @media screen and (min-width: 480px) {} to select my breakpoints, however, it doesn't seem like @media screen is getting picked up at a media query? Must be doing something wrong...

This part of your code is correct.
@media screen and (min-width: 480px) {
h1 {
font-size: 2.5em;
}
}
Unfortunately further on down the CSS you have this part which overwrites the font-size.
h1 {
font-family: Changa One, sans-serif;
font-size: 1.75em;
font-weight: normal;
}
Because you have two conflicting styles, the cascading rules applie here.
- The selector with highest specificity will take into effect. ID > class > tag
- If both are at the same level, the last one always overwrites the previous.
This follows the second part. So all you have to do is move your code after the existing h1 style. It's also a good idea to group these in your CSS file so it's easier for you to notice the cascade.

Try moving the following to the bottom of the stylesheet:
@media screen and (min-width: 480px) {
h1 {
font-size: 2.5em;
}
}
The cascading effect means the later styles will override the ones above.
