Your screen for Illustrator looks quite different than mine. I just signed up with adobe CC. Is there a way to change my settings to follow along better with you? I tried both essentials and essentials classic and still the "new document" dialogue box is mostly presets with tabbed versions of presets for Mobile, Web, Print, Film & Video and Art & Illustration.
