Hey there, I think I missed how to select multiple objects? For example, I want to select the three eclipses objects in This video without selecting the rectangle behind it. Can someone help me? Thanks!

It's been a very long time since I've worked with Illustrator, so this may not be what you are looking for.
If I remember correctly, you'd use the select
tool and shift-click
on each object you want selected.
