How do i build my own logo and diagrams/photos for my website?
do i use adobe illustrator or photoshop ?

I think that the best option is using both softwares. Illustrator is great to create a logo and Photoshop can be used to edit your photos and diagrams.
It depends, remember that Illustrator works with vector files (you don't have to worry about resolution) and Photoshop works with raster images.
