I am looking to set-up an ecommerce site for an artist who sells wooden sculptures. They already have what I believe to be a Joomla site (http://www.matterofwoodwork.com/), but no ecommerce functionality. They are looking to add a shopping cart. Does Joomla have any good shopping cart plugins? Should I use Shopify so they can take over adding new items in the future? What should I charge for this job?

53,547 Pointshey greg, the link you shared is, at least right now, not a joomla site. bur if they plan to move to joomla or they want you to build a joomla site with a shopping cart solution there are some extensions available to achieve this. the 2 probably most popular one's are virtuemart (http://virtuemart.net/) and redshop (http://redcomponent.com/redcomponent/redshop). but there are even more available, depending on the joomla version xou want to use and functionality you need for the site. a good overview and recommended site is the joomla extensions directory that lists all of them: http://extensions.joomla.org/extensions/e-commerce hope that helps you getting started ;)
