231,184 PointsNamed functions would indeed work also. But since the callbacks are generally not used anywhere else, it's a common practice to define them as anonymous function expressions right in the call where they are used.
So you can set up your callbacks differently if you want, but if you work with other people's code it will most likely look very much like the examples you see in the videos.
