You are looking for the CREATE TABLE syntax a full overview can be found here
The syntax you are looking for is
CREATE TABLE categories (name VARCHAR(75));
The "CREATE TABLE categories" part makes a table called categories. By appending the second part in brackets we make a column in that table called "name" with the type "VARCHAR" and finally the "75" in brackets stipulates the maximum length of the field.
