is there a course on teamtreehouse that can teach me that kind of stuff

and I've already done the how to start a businesses course and it doesn't cover that.

perhaps data analytics?

Not that I know. There are so many variables in how much a business makes.

Same for the costs, what is your tech stack, who is going to do the development? You can make a landing page and use analytics in order to get better information about your target market.

For the market size you can use Google Trends https://trends.google.com/trends/
